Rita’s Lentil Soup

This is a good friends recipe and bloody great winter fare.

2-3 carrots dices
2 onions chopped
2-3 sticks celery chopped
butter
oil
1 smoked pork hock or 400g bacon bones smoked
375g lentils – green or brown
2 tins tomatoes
8 cups of chicken stock
2 bay leaves
pinch of chillie flakes
salt and pepper to taste

Heat butter and oil in large pot. Add chopped veggies until the onion is translucent. Add pork hock or bacon bones, lentils, tomatoes, bay leaves, pinch of chillie and stock. Bring to the boil then cover and simmer for 1 ½ - two hours.

Remove Hock and shred all the meat from the bones then add meat back in to soup. Season if necessary.

Serve and eat. Feeds about eight.
